Sodium ascorbate is the sodium salt of L-ascorbic acid (Vitamin C). It is a white to slightly yellow crystalline powder that is freely soluble in water. Compared to ascorbic acid, it is less acidic and better tolerated in pharmaceutical, nutraceutical, food, and injectable formulations. It is widely used as an antioxidant, vitamin supplement, and stabilizer.
